As we gear up for The Joffrey Ballet's Costume Luncheon tomorrow, we wanted to give you a sneak peak of this beautiful event with a couple questions from some of the wonderful people making this event possible.
Tell us about your role in The Joffrey Ballet’s Costume luncheon.
I was asked to be honorary chair for the luncheon because I am currently president of the costume collection of the Chicago History Museum and my interest in preservation of clothing, in this instance, the costumes of The Joffrey Ballet.
What are some of your ideas that will make this Costume Luncheon memorable and fabulous?

Seeing
the costumes of the dancers up close and personal will make them more
"real" to the guests. My feeling is that we must preserve the past to
honor the present and go into the future. What better way to do this
than by seeing garments that have been "alive" on stage and in motion.
The dollars raised will help support the conservation of the Joffrey's costume archives.

What are you looking forward to most as the featured
speaker at the Costume Luncheon for The Joffrey Ballet?
Well, I cant wait to be in Chicago. I was a fan of the Joffrey at City Center in NY - Loved Christian Holder and am fascinated to see all it has become now. I get to see Joffrey Tower and meet the brilliant Artistic Director Ashley C. Wheater and Executive Director Christopher Clinton Conway. And of course to see all of the great costumes will be a thrill for me.
What does speaking at the Luncheon mean to you?
It will be wonderful to speak at the Costume Luncheon because I LOVE COSTUMES. I have been wearing them for 35 years in films, like Black Swan which is all about ballet and on tv and stage. To speak at an organization like the Joffrey, where the art I love is so revered, brought all of these loves together.
Can you give us any insight as to what you will speak about Thursday?
My life in Costumes and how appropriate it is for the Joffrey to save the amazing Costumes they have.

This
Costume Luncheon includes a lot of visual spectacle, how did you incorporate the
beauty of the event and costumes into the dishes you created?
The Co-Chairs and Development staff spent quite a bit of time first planning what options would be to sample at the menu tasting nearly a month ago. Then at the tasting we all looked at the various options from a colour, presentation and taste standpoint...trying to take into consideration all senses in coming up with a lovely early summer luncheon.
What tantalizing flavors can we expect from your dishes? Is there a theme for the dishes you will be serving?
The theme is late spring/early summer. We are using ingredients fresh from the market that one would find this time of year in our region. The flavors that are to be expected are spring peas, fresh mint, truffle and fresh lemon blended together and a decadent dessert that is both festive, honoring the anniversary, but also flavors of fresh berries, chocolate and vanilla!
How many hours of preparation go into catering an event of this size? How many people assist in the process?
It is so hard to estimate the number of hours spent as you would need to take into consideration the purchasing department, receiving department, garde manger department, catering kitchen staff, pastry kitchen staff, servers, managers etc...but in terms of numbers of staff involved I would say 50 staff members would be involved not including the door staff, lobby staff etc...
